BREWING: We enjoy this both on filter and espresso including with milk in flat whites. For filter I recommend brewing at a lower temp 91 degrees, using a higher dose ration 15g-200ml water and coarser grind size, roughly 27 clicks on the Comandante, low agitation, fast brew for a sweet but full bodied coffee.
On espresso we tend to run this as a turbo shot, I.e faster brew times under 17seconds and 18/19 grams of coffee in with a yield that can range from 35g to 45g depending on setup.

Yohn is a second gen coffee producer with his wife Nicol Dayana on their farm Las Brisas which is aptly named for the windy peaks swept by the cool mountain breeze.
His parents began cultivating traditional varieties and for the past decade Yohn has been deeply involved in the family legacy. He's introduced standardised methods on cultivation, fermentation and cupping with a strong goal on raising quality and cup score.
At Las Brisas the natural process is the favoured method of processing coffee, fermented 4-5 days and dried under Marquesina style shade for 15-25 days.
Yohn is investing in infrastructure and is transitioning from traditional varietals to Pacamara and Papayo to enhance quality and resilience. The operation is entirely family run with his brother managing fermentation and drying, his parents support the harvest and labour logistics and Yohn overseas traceability, cupping and commercialisation.
