BREWING: Quite flexible. cone dripper for acidity and flat bottom to amplify sweetness and balance. We also enjoy this on espresso and in milk as a strawberry & cream flavoured Flat White. Currently we run 18.5g in, 5s pre-infusion, 24s shot with 42g out. Generally, coffees that are fermented and roasted fast like this one have high solubility so they extract fairly easily and espresso is better as a "turbo" shot or longer ratios. 

Jose Ruver Guzman is a passionate coffee grower. Since his childhood, he grew up in the countryside and learned to value and love coffee growing. Three years ago, he had the opportunity to acquire his farm, which he manages together with his family. In addition to their commitment to coffee, they have a strong sense of responsibility towards the local community, employing people from the area.

Finca El Aguacatal, owned by Jose Ruver Guzmán, is located in the El Higueron area, at an altitude of approximately 1750 metres above sea level. On these lands, several varieties of coffee are cultivated, such as Bourbon Rosado, Geisha, and Papayo. Each of these varieties has unique characteristics that contribute to the diversity and quality of the coffee produced on the farm.

The Guzman family constantly strives to improve the processes at the farm. They are committed to implementing sustainable practices in all stages of production, from cultivation to processing. Their objective is to obtain the highest quality coffee, highlighting the characteristic flavours and aromas of each variety. Aguacatal is the name given to an area of land planted with avocado trees.
