BREWING: so far we have only dared try it as filter, but it's been amazing, the kind that everyone wants to keep the cupping bowl of. If you want to amplify the acidity and get an almost sour beer and starburst vibe then go for a very coarse grind and a fast brew of 2 minutes. Alternatively, you can get more sweetness, the foam bananas and a richer body with immersion brewer like the Pulsar or Aeropress.
Oscar Fernando Hernández, an industrial engineer and former naval non-commissioned officer, is currently the leader of the 3 generation family project. Under his watch Los Nogales farm has invested in technology and pioneered research and innovation to improve coffee production systems, pulping, drying and transportation, and the quality of the coffee itself.
This coffee has undergone 190 hours of fermentation in 200 lts bins for improved temperature regulation and homogeneity in the fermentation process. The coffee is then taken to the washed using eco-washer, which allows the farm to use the least amount of water possible whilst removing the honey that is the product of fermentation. The residues are reused as fertilisers to create a more cyclical ecological system.
